Who did it:"Gozzi Adriano & C. society is born in the fifties at Colle Val d'Elsa and the society reaches the third generation, with seven workers and the same accurateness of the beginnings.
The ham is obtained by salting national battery pork thigh and maturing it. The ham weight, being a complete piece of the animal body, can vary between eight and nine KGs, according to the animal size.
How to conserve it:To maintain the ham at its best, it should be kept at a room temperature of +12/+18° C.
Ingredients:ham, preservative: E252 nitrate potassium.
The salami is made by pork shoulder mincemeat and bacon from national battery's farms, and with shoulder fat cut in little cubes.
How to conserve it:To maintain the salami at its best it should be kept at room temperature, around +12/+18° Celsius; if it has been already eaten, it should be preserved at +2/+4° C.
Ingredients: light meat around 65%; heavy meat around 35%; additives: E300 L-ascorbic acid; preservative: E252 nitrate potassium; sugars: lactose, dextrose, saccharin.
The finocchiona sausage is made by pork shoulder mincemeat and bacon from national battery's farms, where it gets packing and then is put in rest to mature.
How to conserve it:To maintain the finocchiona at its best it should be kept at room temperature, around +12/+18° Celsius; if it has been already eaten, it should be preserved at +2/+4° C.
Ingredients: light meat around 65%; heavy meat around 35%; additives: E300 L-ascorbic acid; preservative: E252 nitrate potassium; sugars: lactose, dextrose, saccharin.
Rigatino is made salting the national battery pork bacon and then let it mature.

Here the sliced salami are always eaten, for breakfast, a snack and also for supper without cookin anything. But for an important dinner then the sliced salami are served all in a beautiful tray making an appetizer, called just Tuscan appetizer.
