	...such table's arrangements as those beautiful ones made when my aunt used to came for lunch. She was a farmer so my mom used to take out all the crockery and silvery plates she got home and we were compelled to dress new clothes to have the meal..

	To keep fresh the wine is better to fill the bottle rack with cold water an hour before, then you can throw the water and put in the bottle of wine: while water absorbed by the bottle rack gets dry, the wine gets fresh. This idea I had never saw, but when in summer time we brought with us some water to drink in the fields, we put the bottle under the sun covered by a wet cloth, so it is the same.

	We use to put the flavours on our dishes before bringing them on the table, but in any case you should bring the cruet always for those who want to add some more oil, someone who need a resettlement of the dish on his own taste.. they always need un'aggiustatina, we say. A crystal cruet is nice to show and with it becomes a pleasure to serve the flavour, especially if oil and vinegar are of good quality.

	Here when we want to say that something goes well together with something else, we say "it goes well as the cacio cheese on the maccheroni ", as to say it is good as the grated cheese on the pasta. Usually this cheese is the Parmisan one or the Pecorino cheese. You should add it when the pasta is already served on the plates, in smaller or bigger quantities according to each one taste. But if you bring on the table such a nice cheese box, you will see: everybody would add it!

Everyone knows the Palio, the horses' race for the 2 July and the 16 of August in Piazza del Campo in Siena, but only if you are just from Siena, from inside the town you can understand the meaning of the Palio. For people living outside the town, like me, this race is just a beautiful festivity, for the senesi, instead, the Palio is a matter of life and death, or at least of happyness or desperation. These beautiful cups represent the seventeen contradas, and if you give own contrada's cup to a contradaiolo, a person belonging to that contrada, you can offer also poison to him and he will drink it anyway and be sure he will find him delicious!

The ricciarelli are one of the most our traditional cakies and also one of the most d difficult to prepare at home, there are white ones and black ones, because they are covered of chocolate, and with paste of almonds inside. They are always eaten for Christmas and in the rest of the winter. The white one are covered from sugar to veil and if they are well-made they must be soft to be eaten without problems. These delicate sweets are so good that if someone offers a ricciarello to you is not possible to refuse it
