...the pig's meat was rare so it should be enough for the all year. We made from it hams, salamis, sausages, the rigatino and all the other stuff. Then we ate it slice by slice with a lot of bread, usually at breakfast, before going to the fields..

The rigatino would be flat and matured bacon: we call it also dry meat and it's really special! Before we used to eat it a lot for breakfast: a slice of rigatino, an onion, two slices of bread and a glass of wine. After that one would have gone to the fieldwork happier. 'Till now, early in the morning I go to the vegetable gardens and sometimes I have a nice piece of rigatino, at breakfast.

Everyone knows the Palio, the horses' race for the 2 July and the 16 of August in Piazza del Campo in Siena, but only if you are just from Siena, from inside the town you can understand the meaning of the Palio. For people living outside the town, like me, this race is just a beautiful festivity, for the senesi, instead, the Palio is a matter of life and death, or at least of happyness or desperation. These beautiful cups represent the seventeen contradas, and if you give own contrada's cup to a contradaiolo, a person belonging to that contrada, you can offer also poison to him and he will drink it anyway and be sure he will find him delicious!
